What did cheese making look like in the late 1800s, and how did commercial cheese factories change the economy and the environment? In the final lecture of 2018, archaeologist Jim Gibb will highlight the discovery of a cheese factory in Chenango County, New York, that operated from the 1850s to the 1890s. He will narrate the story of this particular factory and the people and farms around it, until—like other cheese factories in the region—it succumbed to monopolies and new technologies. Free and open to all!
